Taking the plates and diner wear off the tray is a must. Leaving the tray on the table makes things look to institutional. One thing we did do before and after meals was to offer warm wash cloths to wash hands and faces with before and after meals. If you want more info on this drop me a note. We had great results with survey on this. We also had water glass waiting at each residnets place just like in the resturants. We had kitchen employees wear serving attire that helped make things look more like a fine resturant. As far as safety you have to realy look at and weigh wheather or not you want to make things life enhancing and for the good of the majority, or institutional! Yes safety matters, but you can't over do the "you are in a nursing home theme!" As Activity Directors we play a big part in making things wonderful for all. I never got written up by state for taking up and definding my residents right to better living.
